How much should this cost? Overwhelm/Overrun suggests about +. But this costs an extra card, (though I could add cantrip). This is wider, applicable to more things - but actually not so much that specific example, since this would hit opponents creatures too.

You want to use the Oath of Druids template here. "At the beginning of each player’s upkeep, that player chooses target player who controls more creatures than they do and is their opponent. The first player gains control of target creature the second player controls."
I agree this is an ugly sentence; but there's both "each player" and "another player" here. So it does make sense.

Weird how lifelink is not a green keyword ability, right? It's done that way to differentiate white and green more since they are the colors mechanically most similar.

Not a "spot on" cost at all. Stoneshaker Shaman can be avoided by using the mana.
In post-manaburn world the interaction is obviously weaker.
