What about "Whenever a creature an opponent controls becomes hexed, put an additional -1/-1 counter on it"? Then it triggers off the hex ability resolving.
As worded, this will cause the hex ability targeting the creature to fizzle, since the triggered ability will resolve first and make the hex target invalid.

The "as long as this is cursed" text no longer makes any sense with the reminder text. It should just say "as long as this has a -1/-1 counter on it."

In every concept of him, he's always been referred to as Ghoulbark (which is more memorable than his first name anyway).

You could base the wording on Hardened Scales, but for -1/-1 counters and obviously not limited to creatures you control.
