Honestly, I had forgotten Absorb even existed when I made this.
From a flavor perspective, since Armored only works in combat, it can protect a knight from a sword, but not from a lightning bolt.
Other than that, I got nothing.
The abilities this shouldn't gain based on its colors are first strike, lifelink and menace. Black has access to all three, so maybe this could cost

Is armored different enough from absorb to exist?
Nice! Pity about the three colours making it hard to cast - I'd say this would be fine in any two of these colours - but I assume that's a theme of this set. The concept in general seems great fun and the kind of thing I'm sure Wizards will print sooner or later.
Added Armored as an ability that this creature can gain.
Changed name and removed double strike and reach from the list of possible ability counters.
Flying and reach are also basically redundant, outside of super niche corner cases. Tbh, I think you'd be better off choosing the ability at random, like Crystalline Giant
Personally speaking, I'd also save space by getting rid of "Unbound Adaptoid gets +1/+1 for each counter on it." The ability to trade +1/+1 counters for ability counters is a strong enough ability on its own. Just make the base creature a 4/5 and go at it.
Some color pie bending going on here, which is unfortunate. I'm going to assume you don't want it to cost

The basic idea is neat. You could save some space making the change optional and removing the "doesn't have" clause.
Among the counters first strike and double strike are redundant.
There are shoe counters :)
It's a shame that mtg lacks sock tokens, really.
