The wording is off on this. I think it should read: "You may choose not to untap CARDNAME during your untap step.

This clarifies the wording and makes it work better within the rules. I changed "destroy" to "sacrifice," because otherwise it could resurrect indestructible creatures limitlessly. Note that I'm unsure about the mana cost for the ability.
