The reminder text is incorrect. SBAs are not applied during the resolution of an ability.
You'd need some kind of self-triggered ability: "When it does, put a +1/+1 counter on that creature."
The complexity of this effect on a gold card makes not a typical common. #redflag
Alternatively, how about: "it deals 1 damage to target creature. At the beginning of the next combat, put a +1/+1 counter on that creature."
How about "When Jester enters the battlefield, it deals 1 damage to target creature an opponent controls, and put a +1/+1 counter on another target creature you control"?
Or even better, "Whenever Jester attacks, it deals 1 damage to target creature an opponent controls. If it did, other attacking creatures you control get +1/+0 UEOT". That captures the "victim and audience" flavour better. Admittedly, may not be common.
