We do seem to be alternating gold and colourless, that's true. I think with cross-block design, Wizards try to include more-than-baseline amounts of gold cards in the blocks before a gold block (Innistrad) and after a gold block (Theros). I think if we manage a set without a multicolour theme three years running, then the central set of those three would have minimal to no gold cards.

Specifically, when you're editing the card, there's a "Frame" dropdown. If you select "Double-faced" from that dropdown, the edit box will show you both the light side and the dark side.

dude1818 created an entire cardset where every card was double-faced. Well, got partway through creating it, at least; he has 87 cards in that cardset so far.
