So stealth is basically a flavoured (and slightly limited) version of hexproof? Obvious FAQ: What about "Put 3 -1/-1 counters on target creature?"

Stealth actually works a bit in the reverse way, this is safe from things that do not target it (so it survives a Wrath of God or a Merciless Eviction second mode, but not a Murder nor a Lightning Strike). The flavour there is that it is hidden from things that don't specifically target it.

For counters, I thought about adding "nor they can cause counters to be put on, or removed from, it", but I fear it may be somewhat too lenghty; it may be worth it too, idk
