The name sounds very magical and fantastic to me and required a quick top-down design.

It does sound cool, but word to word real-life references aren't that common in MTG anymore. Maybe just {something} Ibex?

Considering the amount of weight WotC has placed on not being able to remove poison counters, this seems way too careless in that regard.

You are aware what a bezoar is? Taking that into consideration answers every single one of your concerns.

Since a bezoar is itself a mysticized item (believed to cure poison) the common name of this real word animal gains a new conotation in a magical context.

The name literally is of the form "{something} Ibex", too.
