In this set, flying is replaced by hover and orbital.

Hover is flying-lite. It works like flying, except that creatures with hover can also be blocked by three non-hover creatures. I'm not sure if this complexity is enough to be a problem or not. I wouldn't use it in a core set, but I'm interested to see how it works. In fact, I often find "only blockable by N creatures" annoying to figure out, I hope there's enough hover that that's a fallback rather than a default, and also, that the keyword will help mentally separate hover creatures.

Orbital is flying-plus. It's mechanically the same, but used more sparingly. Orbital can also block hover. It doesn't necessarily make sense that orbital creatures can block ground creatures at all, but it feels right and plays better than having non-interactive creatures.

Currently there isn't a reach-equivalent but there probably will be eventually.

A casual set will usually not be played in conjunction with other sets so I'm deliberately disregarding that no normal set would replace flying (or use a science-fiction + western flavour). If it ever came up, I think the only sensible rule is that hover can also be blocked by flying, but can't block flying, and orbital can block flying, but flying can't block orbital (since orbital creatures are more special). But that's complicated so it's not in the reminder text.
