The minotaurs of the Hurloon Mountains are known for their love of battle. They are also known for their hymns to the dead, sung for friend and foe alike. These hymns can last for days, filling the mountain valleys with their low, haunting sounds.

Does this mean that Silver Knight is no longer a thing? This reminds me of Fiendslayer Paladin.
This set is more akin to an "Alpha redesign" IMO rather than a full-blown MTG reboot. That being said, there a quite a lot of those kind of projects to be found in MTG Salvation and MSE forums if you want to check for some ideas.
I recall MaRo stating that they would have made Hurloon Minotaur much more interesting if they knew he was to become MTG's mascot.

White Knight
Destroy
I'm not sure if that's a completely busted interaction - like you said, a lot of newer players assume you can regenerate cards after you sacrifice them, and I'm not convinced that's a bad idea.
Since most newer players assume that's how regenerate anyway, I like it. I'm worried how it interacts with sac effects though. (Not on this card in particular, but in general.)
Not OP enough.
Testing a "fix" for Regeneration.
I love it.
Compare to Sage of Epityr. As an aside, I'd say this makes a good discard outlet when you need it. Most of the time, you only want to discard one card anyway.
