Colorless is not a color, so "all colors except colorless" is equivalent to "all colors".
Iridescent Angel tells us that it is "protection from each color".
I'm not certain about the Stain tokens. They are a bit much to be used on many cards, but just for this one mythic rare you don't want to create a new token type.
I don't think the two abilities work together all that well since (a) most permanents already have colors and (b) a single Stain turns everything colored, so the choices are less meaningful.
Maybe Stains would be better affecting single permanents? Maybe the protection would be more meaningful if it cared about multicolored rather than each color?
